I am no expert in space travel, but with the engine block being so high and the front being so low, wouldn't inertial drag/resistance make the front end dip while accelerating?

Since there is no drag or resistance in space, the bow wouldn't drag. Instead, if we assume that the engines all produce the same amount of thrust and that we assume the center of mass is below the thrust line of the engines, the ship would actually travel in a vertical circle downward.

However, notice the assumptions. There is no reason to assume that the uniform exterior appearance of the engine array means that each engine produces the same amount of thrust. We could instead assume that the upper engines produce less thrust because they devote some of their energy to shipboard power generation. Or we could assume that they are different engines that just don't produce as much thrust. Or that they are deliberately throttled lower than the other engines. This would counter the downward tendency of our earlier assumptions and keep the ship 'flying level.'

The center of mass could also be higher than we assume. Perhaps there is massive equipment located along the upper spine of the ship, this would be close to the centerline of the engine array, raising up the center of mass. I will admit that the picture makes it hard to support this conclusion, however. But it could contribute to the previous scenario.
